Cultivars and characterUnder cloud most of the year with wide day-night swings; the long growing season gives thick leaf, plenty of pectin and a heavy cold-mineral note. The gardens often sit next to orchards, and the tea carries a faint natural pear scent. Picking runs late: spring from the end of May into early June, winter from early October. The twelve teas listed here run from 1,800 to 2,650 metres, the highest gardens in Taiwan. When Lishan tea is called high and cold, that range is what the words refer to.

Two thousand to 2,600 m — the highest tea district in Taiwan. It is a long drive, but the same road gives you peaches, apples, the Xueshan trailhead and the country’s protected salmon. Give it two days at least.
