Dili sits by the Zhuoshui River at around 1,200 metres, a Bunun settlement.

A river valley has its own microclimate. Evaporation raises humidity, and the valley wind reverses through the day: up-valley by day, sinking back down at night. The air is always moving, so water does not sit on the leaf and disease pressure is a little lower.

That is part of why so many tea districts follow river valleys, beyond the fact that the roads go there.

About the origin

Dili Village (the Tamalung settlement) in Xinyi Township, Nantou promotes Bunun black tea; the Dili Catholic church (Tina's herb garden) also grows herbs for a local herbal tea.

Why this temperature

Ball-rolled oolong is tightly wound, and the first pour only reaches the outside of the pellet, so it needs water close to boiling to open at all. If it does not open, the later steeps swing between thin and heavy. The first and second steeps often take the same time or less, because the leaf does not truly unfurl until the second.

Common mistakes with this tea

Use hot enough water

95°C or above. Too cool and the roast aroma never opens, leaving it flat.

A longer first infusion is normal

Rolled-ball leaf needs the first infusion to open up; the second is then shorter.

Seal it and keep it dark

Best drunk within two months.

Start with 30–75 g

The most common beginner regret is buying 600 g on the first try. Buy a jin only after you know you like it.

Glutinous rice clings and the sweetness lingers on the tongue. A tea with some astringency clears it away.
